Gambas Al Ajillo (Shrimps with Garlic and Chillies)

INGREDIENTS
  • 20 shrimps, peeled and deveined (TESTED WITH KHALEEJ COOKING SHRIMPS)
  • 2 tablespoons olive oil
  • Salt
  • 2 tablespoons finely chopped fresh parsley, plus for garnishing
  • 3 garlic cloves, finely sliced
  • ½ tablespoon red chilli flakes
  • 1 teaspoon finely chopped rosemary (optional)
To Server:

Crusty bread

METHOD
  • Preheat oven to 200°C/400°F/Gas 6.
  • Place the shrimps in an ovenproof pan with a spoonful of olive oil and some salt.
  • Grill the shrimps in the preheated oven for around 3 minutes, till they are partially cooked.
  • Now turn them over, sprinkle with chopped parsley, the remaining olive oil, garlic and chilli fl akes and cook in the oven once again until the shrimps are tender. This should take another 3-4 minutes.
  • Garnish with parsley and rosemary, if desired and serve with crusty bread.
