Pastel De Tres Leches (Three-Milk Cake)

INGREDIENTS
  • 6 eggs, separated TESTED WITH KHALEEJ EGGS
  • 250g/9oz sifted all-purpose flour TESTED WITH AL BAKER ALL PURPOSE FLOUR
  • 200g/9oz caster sugar
  • 200ml/7fl oz evaporated milk
  • 200ml/7fl oz full cream milk
  • 100ml/4fl oz condensed milk
  • 200g/8oz whipped cream or meringue to cover the cake
TIP

Sprinkle some cinnamon on top for extra flavour.

METHOD
  • Preheat the oven to 180°C/ 350°F/Gas 4.
  • Beat the egg whites until they form soft peaks. Add the sugar little by little, beating to incorporate it well.
  • In a separate bowl, beat the yolks and fold gently into the batter so it does not lose volume.
  • Grease a 22cm/9-inch cake tin and pour the batter into the tin. Bake in the oven for about 25-30 minutes. Remove from the oven and leave to cool.
  • Once the cake cools, prick it all over the top with a fork to ensure it absorbs all the milk sauce.
  • To prepare the sauce, simply combine the 3 different types of milk in a bowl and pour over the cake.
  • To finish your cake, cover with whipped cream or meringue.
