Pollo Al Chilindrón (Braised Chicken with Pepper Sauce)

INGREDIENTS
  • 1 kg (2 lb 3oz) whole chicken,separated into thighs and breast (TESTED WITH AL KHAZNA CHICKEN)
  • Salt and pepper
  • Juice of half lemon
  • 1 tablespoon finely chopped fresh chervil
  • 1 teaspoon finely chopped thyme
  • 1 teaspoon finely chopped rosemary
  • 2 garlic cloves, finely chopped
  • 4 ripe tomatoes
  • 2 onions, chopped
  • 2 tablespoons olive oil
  • 2 red peppers
  • 2 green peppers
  • 25g (1 oz) black olives
  • 25g (1 oz) green olives
METHOD
  • We will start by marinating the chicken. To do so, mix salt, pepper, lemon juice, herbs and garlic in a bowl. Cover the chicken cubes with this marinade and refrigerate for an hour.
  • While the chicken is marinating, we will prepare our tomatoes. To save some time peeling them and to ensure we don´t waste any pulp, first dip them in boiling water for a minute. Once they cool down slightly, we can easily remove the skin. Now scoop out the seeds and chop the tomatoes into small cubes.
  • Preheat the oven to 200°C/400°F/Gas 6.
  • It is now time to grill the chicken on a baking tray in the preheated oven for 10 minutes.
  • In the meantime, we will prepare our sauce. Start by sauteing the onion with some olive oil on medium heat. When it starts turning transparent, add the tomatoes and diced peppers and cook uncovered for around 10 minutes on medium to low heat.
  • Add the chicken and let it cook in the sauce for another 10 minutes.
  • Sprinkle with fresh parsley, green and black olives and serve immediately.
